Jayme’s passion for the hospitality industry runs deep. With a career spanning restaurants, hotels, and event management, she brings a wealth of experience and energy to every role she takes on. After earning her degree in Hotel & Event Management from D.I.T Cathal Brugha Street, she began her professional journey in a Conference & Events role at a 4-star hotel. In 2007, she transitioned into the dynamic world of corporate and event catering, where she has thrived in a variety of multifaceted roles ever since.
Known for her meticulous attention to detail and unwavering commitment to customer satisfaction, Jayme has contributed to countless prestigious events. Her enthusiasm for the industry is infectious, and she genuinely enjoys the fast-paced, people-focused nature of her work. She excels at building strong client relationships and crafting memorable experiences tailored to each event.
Jim Tennant
At Egan Hospitality, Jim heads up a team of 15 chefs at our Culinary Centre, driving the culinary vision for the group’s events division. His responsibilities span:
- Menu Innovation – Crafting bespoke menus tailored to diverse client needs
- Team Development – Mentoring chefs and fostering a culture of excellence
- Event Execution – Delivering exceptional food experiences for private, corporate, and large-scale events
Jim Tennant brings a wealth of experience in luxury hospitality and high-end event catering to his role as Executive Head Chef and Assistant Culinary Director at Egan Hospitality Group. With a career spanning prestigious kitchens and global operations, Jim is renowned for his culinary leadership and commitment to excellence.
His journey includes senior roles such as Culinary Director and Executive Chef at the iconic Luttrellstown Castle, Head Chef at Dobbins Restaurant and formative experience alongside Michelin-starred chef Derry Clarke at L’Ecrivain.
Beyond the restaurant scene, he further honed his credentials for large scale operations opening both the D and G Hotels. Jim has held pivotal operational roles, including Catering Operations Director at Johnstown Estate and he also led hospitality efforts for the La Stampa Group delivering elite service in high-pressure environments.

With nearly 40 years in the hospitality business and having held the position as the former Executive Chef for the Egan Hospitality Group, I take immense pride in the events that we have catered over that period. I also pride myself on innovation of menu content, as my role of CEO encompassing Culinary Director coupled with an attention to detail driven, Operational and Logistics role.
I am committed to providing you with the highest level of service, food quality & pre / post event support. Through our Sales Director, Jayme Fay who shares the same values of exceeding your exceptions for each & every event, no matter what the size, with a modern range of menus and service styles, friendly experienced staff on site, we aim to make each one an event to remember.
